This week we are adding a new RECIPE section to the blog. So... If you have a low-fat yummy recipe you'd like to share you can do one of three things:

  1. 1. Add it right here as a comment.
  2. 2. E-mail it to me and I'll post it.
  3. 3. Add it as a comment to any recipe that may appear.

YUMMY spring wraps!

On a large spinach wrap (Mission has a great one)

* Add your spread of choice. I like a sliver of cream cheese or just mustard. if I am making a bunch, I like to soften the cream cheese before hand and crush fresh garlic and green onions into it. Spread it on half of the wrap.

*Add a big ol' leaf of lettuce or a bunch of baby spinach leaves to the center of the wrap.

*Add your cheese of choice (swiss or mozzarella for me!)

*Now add your deli meat (love that turkey)I have also done it without meat if I haven't got any.

*Now pile on all the veggies you dare! I love cucumbers, grated carrots, tomatoes, peppers, olives, more lettuce, whatever you have!

*Fold up the bottom and roll that baby!

I love this because I get lots of veggies at one time and a protein with the meat and cheese. It is tempting to add lots of sauces like ranch or more cream cheese, but it tastes great with out them. You can also add a vinaigrette or salt and pepper if you're into that. My kids love it and so do I!
